Microscopic Holiday Feasting

Hope you had a great Christmas holiday.

Most families end up with a ton of leftovers. How about you? Turkey sandwiches for the next three weeks?

Just keep in mind that most cooked leftovers will spoil within three days. Mold, bacteria and yeast are already having their own holiday feast with the leftovers in your fridge.

Best idea is to put them in the freezer. Microorganisms can’t live in sub-zero temperatures. It takes the pressure off you having to eat all the leftovers before they start too get slimy.

One of the reasons a lot of people get sick after Christmas is because they are living off moldy leftovers. Most people blame the Christmas sugar – but few think about the week-old turkey.

So either eat them up in three days or less or store them in the freezer.

Not knowing how to handle leftovers (whether raw or cooked) can make the healthiest food worse than a pig-out at McDonald’s.
